In meteorology, precipitation is any product of the condensation of atmospheric water vapor that falls under gravity. The main forms of precipitation include drizzle, sleet, snow and hail. Precipitation occurs when a portion of the atmosphere becomes saturated with water vapor, so that the water condenses and "precipitates", thus and mist are not precipitation but suspensions, because the water vapor does not condense sufficiently to precipitate. Two processes acting together, can lead to air becoming saturated: cooling the air or adding water vapor to the air. Precipitation forms as smaller droplets coalesce via collision with other rain drops or ice crystals within a cloud. Short, intense periods of rain in scattered locations are called "showers."Moisture, lifted or otherwise forced to rise over a layer of sub-freezing air at the surface may be condensed into clouds and rain. This process is active when freezing rain occurs. A stationary front is present near the area of freezing rain and serves as the foci for forcing and rising air.
Provided necessary and sufficient atmospheric moisture content, the moisture within the rising air will condense into clouds, namely stratus and cumulonimbus. The cloud droplets will grow large enough to form raindrops and descend toward the Earth where they will freeze on contact with exposed objects. Where warm water bodies are present, for example due to water evaporation from lakes, lake-effect snowfall becomes a concern downwind of the warm lakes within the cold cyclonic flow around the backside of extratropical cyclones. Lake-effect snowfall can be locally heavy. Thundersnow is possible within lake effect precipitation bands. In mountainous areas, heavy precipitation is possible where upslope flow is maximized within windward sides of the terrain at elevation. On the leeward side of mountains, desert climates can exist due to the dry air caused by compressional heating. Most precipitation is caused by convection; the movement of the monsoon trough, or intertropical convergence zone, brings rainy seasons to savannah climes.
Precipitation is a major component of the water cycle, is responsible for depositing the fresh water on the planet. 505,000 cubic kilometres of water falls as precipitation each year. Given the Earth's surface area, that means the globally averaged annual precipitation is 990 millimetres, but over land it is only 715 millimetres. Climate classification systems such as the Köppen climate classification system use average annual rainfall to help differentiate between differing climate regimes. Precipitation may occur on other celestial bodies, e.g. when it gets cold, Mars has precipitation which most takes the form of frost, rather than rain or snow. Convective processes involve strong vertical motions that can cause the overturning of the atmosphere in that location within an hour and cause heavy precipitation, while stratiform processes involve weaker upward motions and less intense precipitation. Precipitation can be divided into three categories, based on whether it falls as liquid water, liquid water that freezes on contact with the surface, or ice. Mixtures of different types of precipitation, including types in different categories, can fall simultaneously. Liquid forms of precipitation include drizzle. Rain or drizzle that freezes on contact within a subfreezing air mass is called "freezing rain" or "freezing drizzle". Frozen forms of precipitation include snow, ice needles, ice pellets and graupel; the dew point is the temperature to which a parcel must be cooled in order to become saturated, condenses to water. Water vapor begins to condense on condensation nuclei such as dust and salt in order to form clouds. An elevated portion of a frontal zone forces broad areas of lift, which form clouds decks such as altostratus or cirrostratus.
Stratus is a stable cloud deck which tends to form when a cool, stable air mass is trapped underneath a warm air mass. It can form due to the lifting of advection fog during breezy conditions. There are four main mechanisms for cooling the air to its dew point: adiabatic cooling, conductive cooling, radiational cooling, evaporative cooling. Adiabatic cooling occurs when air expands; the air can rise due to convection, large-scale atmospheric motions, or a physical barrier such as a mountain. Conductive cooling occurs when the air comes into contact with a colder surface by being blown from one surface to another, for example from a liquid water surface to colder land. Radiational cooling occurs due to the emission of infrared radiation, either by the air or by the surface underneath. Evaporative cooling occurs when moisture is added to the air through evaporation, which forces the air temperature to cool to its wet-bulb temperature, or until it reaches saturation; the main ways water vapor is added to the air are: wind convergence into areas of upward motion, precipitation or virga falling from above, daytime heating evaporating water from the surface of oceans, water bodies or wet lan
Melbourne is the capital and most populous city of the Australian state of Victoria, the second most populous city in Australia and Oceania. Its name refers to an urban agglomeration of 9,992.5 km2, comprising a metropolitan area with 31 municipalities, is the common name for its city centre. The city occupies much of the coastline of Port Phillip bay and spreads into the hinterlands towards the Dandenong and Macedon ranges, Mornington Peninsula and Yarra Valley, it has a population of 4.9 million, its inhabitants are referred to as "Melburnians". The city was founded on 30 August 1835, in the then-British colony of New South Wales, by free settlers from the colony of Van Diemen’s Land, it was incorporated as a Crown settlement in 1837 and named in honour of the British Prime Minister, William Lamb, 2nd Viscount Melbourne. In 1851, four years after Queen Victoria declared it a city, Melbourne became the capital of the new colony of Victoria. In the wake of the 1850s Victorian gold rush, the city entered a lengthy boom period that, by the late 1880s, had transformed it into one of the world's largest and wealthiest metropolises.
After the federation of Australia in 1901, it served as interim seat of government of the new nation until Canberra became the permanent capital in 1927. Today, it is a leading financial centre in the Asia-Pacific region and ranks 15th in the Global Financial Centres Index; the city is home to many of the best-known cultural institutions in the nation, such as the Melbourne Cricket Ground, the National Gallery of Victoria and the World Heritage-listed Royal Exhibition Building. It is the birthplace of Australian impressionism, Australian rules football, the Australian film and television industries and Australian contemporary dance. More it has been recognised as a UNESCO City of Literature and a global centre for street art, live music and theatre, it is the host city of annual international events such as the Australian Grand Prix, the Australian Open and the Melbourne Cup, has hosted the 1956 Summer Olympics and the 2006 Commonwealth Games. Due to it rating in entertainment and sport, as well as education, health care and development, the EIU ranks it the second most liveable city in the world.
The main airport serving the city is Melbourne Airport, the second busiest in Australia, Australia's busiest seaport the Port of Melbourne. Its main metropolitan rail terminus is Flinders Street station and its main regional rail and road coach terminus is Southern Cross station, it has the most extensive freeway network in Australia and the largest urban tram network in the world. Indigenous Australians have lived in the Melbourne area for an estimated 31,000 to 40,000 years; when European settlers arrived in the 19th-century, under 2,000 hunter-gatherers from three regional tribes—the Wurundjeri and Wathaurong—inhabited the area. It was an important meeting place for the clans of the Kulin nation alliance and a vital source of food and water; the first British settlement in Victoria part of the penal colony of New South Wales, was established by Colonel David Collins in October 1803, at Sullivan Bay, near present-day Sorrento. The following year, due to a perceived lack of resources, these settlers relocated to Van Diemen's Land and founded the city of Hobart.
It would be 30 years. In May and June 1835, John Batman, a leading member of the Port Phillip Association in Van Diemen's Land, explored the Melbourne area, claimed to have negotiated a purchase of 600,000 acres with eight Wurundjeri elders. Batman selected a site on the northern bank of the Yarra River, declaring that "this will be the place for a village" before returning to Van Diemen's Land. In August 1835, another group of Vandemonian settlers arrived in the area and established a settlement at the site of the current Melbourne Immigration Museum. Batman and his group arrived the following month and the two groups agreed to share the settlement known by the native name of Dootigala. Batman's Treaty with the Aborigines was annulled by Richard Bourke, the Governor of New South Wales, with compensation paid to members of the association. In 1836, Bourke declared the city the administrative capital of the Port Phillip District of New South Wales, commissioned the first plan for its urban layout, the Hoddle Grid, in 1837.
Known as Batmania, the settlement was named Melbourne in 1837 after the British Prime Minister, William Lamb, 2nd Viscount Melbourne, whose seat was Melbourne Hall in the market town of Melbourne, Derbyshire. That year, the settlement's general post office opened with that name. Between 1836 and 1842, Victorian Aboriginal groups were dispossessed of their land by European settlers. By January 1844, there were said to be 675 Aborigines resident in squalid camps in Melbourne; the British Colonial Office appointed five Aboriginal Protectors for the Aborigines of Victoria, in 1839, however their work was nullified by a land policy that favoured squatters who took possession of Aboriginal lands. By 1845, fewer than 240 wealthy Europeans held all the pastoral licences issued in Victoria and became a powerful political and economic force in Victoria for generations to come. Letters patent of Queen Victoria, issued on 25 June 1847, declared Melbourne a city. On 1 July 1851, the Port Phillip District separated from New South Wales to become the Colony of Victoria, with Melbourne as its capital.

Domestic sheep are quadrupedal, ruminant mammals kept as livestock. Like most ruminants, sheep are members of the even-toed ungulates. Although the name sheep applies to many species in the genus Ovis, in everyday usage it always refers to Ovis aries. Numbering a little over one billion, domestic sheep are the most numerous species of sheep. An adult female sheep is referred to as a ewe, an intact male as a ram or a tup, a castrated male as a wether, a younger sheep as a lamb. Sheep are most descended from the wild mouflon of Europe and Asia. One of the earliest animals to be domesticated for agricultural purposes, sheep are raised for fleeces and milk. A sheep's wool is the most used animal fiber, is harvested by shearing. Ovine meat is called lamb when from younger animals and mutton when from older ones in Commonwealth countries, lamb in the United States. Sheep continue to be important for wool and meat today, are occasionally raised for pelts, as dairy animals, or as model organisms for science.
Sheep husbandry is practised throughout the majority of the inhabited world, has been fundamental to many civilizations. In the modern era, New Zealand, the southern and central South American nations, the British Isles are most associated with sheep production. Sheepraising has a large lexicon of unique terms which vary by region and dialect. Use of the word sheep began in Middle English as a derivation of the Old English word scēap. A group of sheep is called a herd or mob. Many other specific terms for the various life stages of sheep exist related to lambing and age. Being a key animal in the history of farming, sheep have a entrenched place in human culture, find representation in much modern language and symbology; as livestock, sheep are most associated with pastoral, Arcadian imagery. Sheep figure in many mythologies—such as the Golden Fleece—and major religions the Abrahamic traditions. In both ancient and modern religious ritual, sheep are used as sacrificial animals; the exact line of descent between domestic sheep and their wild ancestors is unclear.
The most common hypothesis states. Sheep were among the first animals to be domesticated by humankind. C in Mesopotamia; the rearing of sheep for secondary products, the resulting breed development, began in either southwest Asia or western Europe. Sheep were kept for meat and skins. Archaeological evidence from statuary found at sites in Iran suggests that selection for woolly sheep may have begun around 6000 BC, the earliest woven wool garments have been dated to two to three thousand years later. Sheep husbandry spread in Europe. Excavations show that in about 6000 BC, during the Neolithic period of prehistory, the Castelnovien people, living around Châteauneuf-les-Martigues near present-day Marseille in the south of France, were among the first in Europe to keep domestic sheep. From its inception, ancient Greek civilization relied on sheep as primary livestock, were said to name individual animals. Ancient Romans kept sheep on a wide scale, were an important agent in the spread of sheep raising.
Pliny the Elder, in his Natural History, speaks at length about wool. European colonists spread the practice to the New World from 1493 onwards. Domestic sheep are small ruminants with a crimped hair called wool and with horns forming a lateral spiral. Domestic sheep differ from their wild relatives and ancestors in several respects, having become uniquely neotenic as a result of selective breeding by humans. A few primitive breeds of sheep retain some of the characteristics of their wild cousins, such as short tails. Depending on breed, domestic sheep may have no horns at all, or horns in both sexes, or in males only. Most horned breeds have a single pair. Another trait unique to domestic sheep as compared to wild ovines is their wide variation in color. Wild sheep are variations of brown hues, variation within species is limited. Colors of domestic sheep range from pure white to dark chocolate brown, spotted or piebald. Selection for dyeable white fleeces began early in sheep domestication, as white wool is a dominant trait it spread quickly.
However, colored sheep do appear in many modern breeds, may appear as a recessive trait in white flocks. While white wool is desirable for large commercial markets, there is a niche market for colored fleeces for handspinning; the nature of the fleece varies among the breeds, from dense and crimped, to long and hairlike. There is variation of wool type and quality among members of the same flock, so wool classing is a step in the commercial processing of the fibre. Depending on breed, sheep show a range of weights, their rate of growth and mature weight is a heritable trait, selected for in breeding. Ewes weigh between 45 and 100 kilograms, rams between 45 and 160 kilograms; when all deciduous teeth have erupted, the sheep has 20 teeth. Australian rules football
Australian rules football known as Australian football, or called Aussie rules, football or footy, is a contact sport played between two teams of eighteen players on an oval-shaped field a modified cricket ground. Points are scored by kicking the oval-shaped ball between behind posts. During general play, players may position themselves anywhere on the field and use any part of their bodies to move the ball; the primary methods are kicking and running with the ball. There are rules on how the ball can be handled: for example, players running with the ball must intermittently bounce or touch it on the ground. Throwing the ball is not allowed and players must not get caught holding the ball. A distinctive feature of the game is the mark, where players anywhere on the field who catch the ball from a kick are awarded possession. Possession of the ball is in dispute at all times except when mark is paid. Players can use their whole body to obstruct opponents. Dangerous physical contact, interference when marking and deliberately slowing the play are discouraged with free kicks, distance penalties or suspension for a certain number of matches, depending on the seriousness of the infringement.
The game features frequent physical contests, spectacular marking, fast movement of both players and the ball and high scoring. The sport's origins can be traced to football matches played in Melbourne, Victoria in 1858, inspired by English public school football games. Seeking to develop a game more suited to adults and Australian conditions, the Melbourne Football Club published the first laws of Australian football in May 1859, making it the oldest of the world's major football codes. Australian football has the highest spectator attendance and television viewership of all sports in Australia, while the Australian Football League, the sport's only professional competition, is the nation's wealthiest sporting body; the AFL Grand Final, held annually at the Melbourne Cricket Ground, is the highest attended club championship event in the world. The sport is played at amateur level in many countries and in several variations, its rules are governed by the AFL Commission with the advice of the AFL's Laws of the Game Committee.
Australian rules football is known by several nicknames, including Aussie rules and footy. In some regions, it is marketed as AFL after the Australian Football League. There is evidence of football being played sporadically in the Australian colonies in the first half of the 19th century. Compared to cricket and horse racing, football was viewed as a minor "amusement" at the time, while little is known about these early one-off games, it is clear they share no causal link with Australian football. In 1858, in a move that would help to shape Australian football in its formative years, "public" schools in Melbourne, Victoria began organising football games inspired by precedents at English public schools; the earliest such match, held in St Kilda on 15 June, was between Melbourne Grammar and St Kilda Grammar. On 10 July 1858, the Melbourne-based Bell's Life in Victoria and Sporting Chronicle published a letter by Tom Wills, captain of the Victoria cricket team, calling for the formation of a "foot-ball club" with a "code of laws" to keep cricketers fit during winter.
Born in Australia, Wills played a nascent form of rugby football whilst a pupil at Rugby School in England, returned to his homeland a star athlete and cricketer. His letter is regarded by many historians as giving impetus for the development of a new code of football today known as Australian football. Two weeks Wills' friend, cricketer Jerry Bryant, posted an advertisement for a scratch match at the Richmond Paddock adjoining the Melbourne Cricket Ground; this was the first of several "kickabouts" held that year involving members of the Melbourne Cricket Club, including Wills, Bryant, W. J. Hammersley and J. B. Thompson. Trees were used as goalposts and play lasted an entire afternoon. Without an agreed upon code of laws, some players were guided by rules they had learned in the British Isles, "others by no rules at all". Another significant milestone in 1858 was a match played under experimental rules between Melbourne Grammar and Scotch College, held at the Richmond Paddock; this 40-a-side contest, umpired by Wills and Scotch College teacher John Macadam, began on 7 August and continued over two subsequent Saturdays, ending in a draw with each side kicking one goal.
It is commemorated with a statue outside the MCG, the two schools have competed annually since in the Cordner-Eggleston Cup, the world's oldest continuous football competition. Since the early 20th century, it has been suggested that Australian football was derived from the Irish sport of Gaelic football, not codified until 1885. There is no archival evidence in favour of a Gaelic influence, the style of play shared between the two modern codes was evident in Australia long before the Irish game evolved in a similar direction. Another theory, first proposed in 1983, posits that Wills, having grown up amongst Aborigines in Victoria, may have seen or played the Aboriginal game of Marn Grook, incorporated some of its features into early Australian football; the evidence for this is only circumstantial, according to biographer Greg de Moore's research, Wills was "almost influenced by his experience at Rugby School". A loosely organised Melbourne side, captained by Wills, played against other football enthusiasts in the winter and spring of 1858.

Postcodes are used in Australia to more efficiently sort and route mail within the Australian postal system. Postcodes in Australia are placed at the end of the Australian address. Postcodes were introduced in Australia in 1967 by the Postmaster-General's Department and are now managed by Australia Post, are published in booklets available from post offices or online from the Australia Post website. Australian envelopes and postcards have four square boxes printed in orange at the bottom right for the postcode; these are used. Postcodes were introduced in Australia in 1967 by the Postmaster-General's Department to replace earlier postal sorting systems, such as Melbourne's letter and number codes and a similar system used in rural and regional New South Wales; the introduction of the postcodes coincided with the introduction of a large-scale mechanical mail sorting system in Australia, starting with the Sydney GPO. By 1968, 75% of mail was using postcodes, in the same year post office preferred-size envelopes were introduced, which came to be referred to as “standard envelopes”.
Postcode squares were introduced in June 1990 to enable Australia Post to use optical character recognition software in its mail sorting machines to automatically and more sort mail by postcodes. Australian postcodes consist of four digits, are written after the name of the city, suburb, or town, the state or territory: Mr John Smith 100 Flushcombe Road BLACKTOWN NSW 2148When writing an address by hand, a row of four boxes is pre-printed on the lower right hand corner of an envelope, the postcode may be written in the boxes. If addressing a letter from outside Australia, the postcode is recorded before'Australia'. Australian postcodes are sorting information, they are linked with one area. Due to post code rationalisation, they can be quite complex in country areas; the south-western Victoria 3221 postcode of the Geelong Mail Centre includes twenty places around Geelong with few people. This means that mail for these places is not sorted until it gets to Geelong; some postcodes cover large populations, while other postcodes have much smaller populations in urban areas.
Australian postcodes range from 0200 for the Australian National University to 9944 for Cannonvale, Queensland. Some towns and suburbs have two postcodes — one for street deliveries and another for post office boxes. For example, a street address in the Sydney suburb of Parramatta would be written like this: Mr John Smith 99 George Street PARRAMATTA NSW 2150But mail sent to a PO Box in Parramatta would be addressed: Mr John Smith PO Box 99 PARRAMATTA NSW 2124Many large businesses, government departments and other institutions receiving high volumes of mail had their own postcode as a Large Volume Receiver, e.g. the Royal Brisbane and Women's Hospital has the postcode 4029, the Australian National University had the postcode 0200. More postcode ranges were made available for LVRs in the 1990s. Australia Post has been progressively discontinuing the LVR programme since 2006; the first one or two numbers show the state or territory that the postcode belongs to Sometimes near the state and territory borders, Australia Post finds it easier to send mail through a nearby post office, across the border: Some of the postcodes above may cover two or more states.
For example, postcode 2620 covers both a locality in NSW as well as a locality in the ACT, postcode 0872 covers a number of localities across WA, SA, NT and QLD. Three locations straddle the NSW-Queensland border. Jervis Bay Territory, once an exclave of the ACT but now a separate territory, is geographically located on the coast of NSW, it is just south of the towns of Huskisson, with which it shares a postcode. Mail to the Jervis Bay Territory is still addressed to the ACT; the numbers used to show the state on each radio callsign in Australia are the same number as the first number for postcodes in that state, e.g. 2xx in New South Wales, 3xx in Victoria, etc. Radio callsigns pre-date postcodes in Australia by more than forty years. Australia's external territories are included in Australia Post's postcode system. While these territories do not belong to any state, they are addressed as such for mail sorting: Three scientific bases in Antarctica operated by the Australian National Antarctic Research Expeditions share a postcode with the isolated sub-Antarctic island of Macquarie Island: Each state's capital city ends with three zeroes, while territorial capital cities end with two zeroes.
Capital city postcodes were the lowest postcodes in their state or territory range, before new ranges for LVRs and PO Boxes were made available. The last number can be changed from "0" to "1" to get the postcode for General Post Office boxes in any capital city: While the first number of a postcode shows the state or territory, the second number shows a region within the state. However, postcodes with the same second number are not always next to each other; as an example, postcodes in the range 2200–2299 are split between the southern suburbs of Sydney and the Central Coast of New South Wales. Mildura is a regional city in north-west Victoria, Australia. Located on the Victorian side of the Murray River, Mildura had a population of 33,444 in 2016; when nearby Wentworth, Nichols Point and Merbein are included, the area had an estimated urban population of 50,998 at June 2016. It is the largest settlement in the Sunraysia region. Mildura is a major horticultural centre notable for its grape production, supplying 80% of Victoria's grapes. Many wineries source grapes from Mildura; the city's central business district is located just a short distance from the banks of the Murray. Langtree Avenue is the main shopping and dining precinct in Mildura, with the middle section of the street a pedestrian mall; the other major retail precinct is along Fifteenth Street in the Mildura South area, where a mid-sized undercover shopping mall and several big box stores are located. The city's name was taken from the Mildura homestead, an early sheep station which covered most of the area; the urban area of Mildura is surrounded by irrigated horticulture, where the original grape and citrus blocks were located with water irrigated from the Murray River.
Mildura has a long history of grape farming. There are several theories as to the origin of the name Mildura. While it was the name of the sheep station, without precedent in the English language, most historians believe it to have originated from Aboriginal Australian words. However, the etymology of Mildura is not certain, as in several local dialects, the words mill and dura have different meanings; the word dura is thought to mean "earth", "sand" or "rock" in the local Ladji Ladji language. However, usage of the word mill varies by dialect and may mean "red" or "water", thus, interpretations of the name can vary from "red earth" to "water rock". Many Aboriginal people lived around the site of Mildura because of the abundant food. Local tribes included the Jarijari; the first Europeans in the area brought sheep to graze the rich pastures. A major drought in Victoria from 1877 to 1884 prompted Alfred Deakin a minister in the State Government and chairman of a Royal Commission on water supply to visit the irrigation areas of California.
There he met William Chaffey. In 1886, Canadian-American irrigator George Chaffey came to Australia and selected a derelict sheep station known as Mildura as the site for his first irrigation settlement, signing an agreement with the Victorian government to spend at least £300,000 on permanent improvements at Mildura in the next twenty years. After much political wrangling, the settlement of Mildura was established in 1887; the Post Office opened on 23 January 1888. The nearby towns of Wentworth, Gol Gol and Yelta sprang up in the mid-to-late 19th century. In the 1890s came the scourge of the rabbit; this devastated the sheep farmers south of the Murray. There was a financial recession at this time. Combined, these factors restricted growth of the new settlement. After this period, the new settlement grew, it was soon the main town of the district. Suburbs and new satellite towns sprang up. From the 1920s, a number of ` suburban' train services were established to Red Cliffs; these were operated by railcars.
Post war Mildura experienced a large influx of migrants from European and Mediterranean countries including Italy and Greece. Many of these migrants were attracted by the unskilled labour offered by the fruit picking industry. In 1934 Mildura was proclaimed a city. In 2004 there was a controversial proposal by the Victorian Government to build a state-level Long Term Containment Facility for Industrial Waste in Nowingi 50 km south of Mildura; the site is a small enclave of state forest surrounded by national park, contains habitat important to a number of threatened species. The abandoning of the LTCF proposal was received with jubilation by opponents of the LTCF not only in the Mildura area and elsewhere in Victoria, but across the border in South Australia where there were fears that in reputation, if not in substance, the toxic waste could affect the water supply via the Murray River and thereby the fruit-growing industries of the Riverland and Murraylands; the Mildura Rural City Council and residents spent $2 million fighting the Government's proposal for the LTCF at Nowingi.
On 10 January 2007 the Victorian Government did not rule out some form of reimbursement for the Rural City of Mildura council's legal and other costs in opposing the LTCF. Mildura is situated on flat land without hills or mountains on the southern bank of the Murray River and surrounded to the west and east by lakes and billabongs including Lake Hawthorn, Lake Ranfurly and Lake Gol Gol. Several towns surround Mildura on the flat plains including Merbein to the west as well as Irymple and Red Cliffs to the south which could be considered suburban areas or satellite towns separated by small stretches of open farmland. While the land along the river and irrigation channels is fertile, much of the land around Mildura is dry and semi-arid. Mildura is a low-rise and low density urban area, overwhelmingly dependent upon private automobiles for transportation.

The mille-feuille, vanilla slice or custard slice, similar to but different from the Napoleon, is a French pastry whose exact origin is unknown. Its modern form was influenced by improvements made by Marie-Antoine Carême. Traditionally, a mille-feuille is made up of three layers of puff pastry, alternating with two layers of pastry cream; the top pastry layer is dusted with confectioner's sugar, sometimes cocoa, pastry crumbs, or pulverized seeds. Alternatively, the top is glazed with icing or fondant in alternating white and brown stripes, combed. All the elements of the recipe are present in numerous cookbooks since, at least, the 16th century but the exact origin of the mille-feuille is unknown; the earliest mention of the name mille-feuille itself appears in 1733 in an English-language cookbook written by French chef Vincent La Chapelle. Unlike the modern cake, the 18th-century mille-feuille is served stuffed with jam and marmalade instead of cream. In French, the first mention of the mille-feuille appears a little in 1749, in a cookbook by Menon.
The word mille-feuille is not used again in the recipe books of the 18th century. However, under the reign of Napoleon Bonaparte, several of the fanciest Parisian pastry shops appear to have sold the cake. According to Alan Davidson in the Oxford Companion to Food, the invention of the form is attributed to Szeged, where a caramel-coated mille-feuille is called Szegediner Torte. Traditionally, a mille-feuille is made up of three layers of puff pastry, two layers of crème pâtissière; the top layer is coated with a sprinkling of powdered sugar. In variations, the top is glazed with icing, in alternating white and brown strips, combed. Today, there are savory mille-feuille, with cheese and spinach or other savory fillings. According to La Varenne, it was earlier called gâteau de mille-feuilles, referring to the many layers of pastry. Using traditional puff pastry, made with six folds of three layers, it has 729 layers.
The variant name of Napoleon appears to come from napolitain, the French adjective for the Italian city of Naples, but altered by association with the name of Emperor Napoleon I of France. The Larousse Gastronomique does not mention the Napoléon, although a gateau napolitain is listed, with a note that while the cake itself is not seen, small biscuits known as fonds napolitains are still made, decorated with butter cream or conserves. There is no evidence to connect the pastry to the emperor himself. In France, a Napoléon is a particular type of mille-feuille filled with almond-flavoured paste. In Russian literature, a cake named Napoleon is first mentioned as early as in the first half of the 19th century. Alexander Bestuzhev explained the emergence of such names by the romantic and historicist spirit of that time; the cake has enjoyed an great popularity since the centenary celebration of the Russian victory over Napoleon in the Patriotic War of 1812.
