Milk is a nutrient-rich, white liquid food produced by the mammary glands of mammals. It is the primary source of nutrition for infant mammals before they are able to digest other types of food. Early-lactation milk contains colostrum, which carries the mother's antibodies to its young and can reduce the risk of many diseases, it contains many other nutrients including lactose. Interspecies consumption of milk is not uncommon among humans, many of whom consume the milk of other mammals; as an agricultural product, milk called dairy milk, is extracted from farm animals during or soon after pregnancy. Dairy farms produced about 730 million tonnes of milk from 260 million dairy cows. India is the world's largest producer of milk, is the leading exporter of skimmed milk powder, yet it exports few other milk products; the increasing rise in domestic demand for dairy products and a large demand-supply gap could lead to India being a net importer of dairy products in the future. The United States, India and Brazil are the world's largest exporters of milk and milk products.
China and Russia were the world's largest importers of milk and milk products until 2016 when both countries became self-sufficient, contributing to a worldwide glut of milk. Throughout the world, more than six billion people consume milk products. Over 750 million people live in dairy farming households; the term "milk" comes from "Old English meoluc, from Proto-Germanic *meluks "milk"". Milk consumption occurs in two distinct overall types: a natural source of nutrition for all infant mammals and a food product obtained from other mammals for consumption by humans of all ages. In all mammals, milk is fed to infants through breastfeeding, either directly or by expressing the milk to be stored and consumed later; the early milk from mammals is called colostrum. Colostrum contains antibodies that provide protection to the newborn baby as well as nutrients and growth factors; the makeup of the colostrum and the period of secretion varies from species to species. For humans, the World Health Organization recommends exclusive breastfeeding for six months and breastfeeding in addition to other food for up to two years of age or more.
In some cultures it is common to breastfeed children for three to five years, the period may be longer. Fresh goats' milk is sometimes substituted for breast milk, which introduces the risk of the child developing electrolyte imbalances, metabolic acidosis, megaloblastic anemia, a host of allergic reactions. In many cultures in the West, humans continue to consume milk beyond infancy, using the milk of other mammals as a food product; the ability to digest milk was limited to children as adults did not produce lactase, an enzyme necessary for digesting the lactose in milk. People therefore converted milk to curd and other products to reduce the levels of lactose. Thousands of years ago, a chance mutation spread in human populations in Europe that enabled the production of lactase in adulthood; this mutation allowed milk to be used as a new source of nutrition which could sustain populations when other food sources failed. Milk is processed into a variety of products such as cream, yogurt, ice cream, cheese.
Modern industrial processes use milk to produce casein, whey protein, condensed milk, powdered milk, many other food-additives and industrial products. Whole milk and cream have high levels of saturated fat; the sugar lactose is found only in milk, forsythia flowers, a few tropical shrubs. The enzyme needed to digest lactose, reaches its highest levels in the human small intestine after birth and begins a slow decline unless milk is consumed regularly; those groups who do continue to tolerate milk, however have exercised great creativity in using the milk of domesticated ungulates, not only of cattle, but sheep, yaks, water buffalo, horses and camels. India is buffalo milk in the world. In food use, from 1961, the term milk has been defined under Codex Alimentarius standards as: "the normal mammary secretion of milking animals obtained from one or more milkings without either addition to it or extraction from it, intended for consumption as liquid milk or for further processing." The term dairy relates to animal milk production.
A substance secreted by pigeons to feed their young is called "crop milk" and bears some resemblance to mammalian milk, although it is not consumed as a milk substitute. The definition above precludes non-animal products which resemble dairy milk in color and texture, such as almond milk, coconut milk, rice milk, soy milk. In English, the word "milk" has been used to refer to "milk-like plant juices" since 1200 AD. In the USA, milk alternatives now command 13% of the "milk" market, leading the US dairy industry to attempt, multiple times, to sue producers of dairy milk alternatives, to have the name "milk" limited to animal milk, so far without success; the mammary gland is thought to have derived from apocrine skin glands. Some eggs are laid by female animals of many different species, including birds, amphibians and fish, have been eaten by humans for thousands of years. Bird and reptile eggs consist of a protective eggshell and vitellus, contained within various thin membranes; the most consumed eggs are chicken eggs. Other poultry eggs including those of duck and quail are eaten. Fish eggs are called caviar. Egg yolks and whole eggs store significant amounts of protein and choline, are used in cookery. Due to their protein content, the United States Department of Agriculture categorized eggs as Meats within the Food Guide Pyramid. Despite the nutritional value of eggs, there are some potential health issues arising from cholesterol content, salmonella contamination, allergy to egg proteins. Chickens and other egg-laying creatures are kept throughout the world and mass production of chicken eggs is a global industry. In 2009, an estimated 62.1 million metric tons of eggs were produced worldwide from a total laying flock of 6.4 billion hens.
There are issues of regional variation in demand and expectation, as well as current debates concerning methods of mass production. In 2012, the European Union banned battery husbandry of chickens. Bird eggs have been valuable foodstuffs since prehistory, in both hunting societies and more recent cultures where birds were domesticated; the chicken was domesticated for its eggs before 7500 BCE. Chickens were brought to Sumer and Egypt by 1500 BCE, arrived in Greece around 800 BCE, where the quail had been the primary source of eggs. In Thebes, the tomb of Haremhab, dating to 1420 BCE, shows a depiction of a man carrying bowls of ostrich eggs and other large eggs those of the pelican, as offerings. In ancient Rome, eggs were preserved using a number of methods and meals started with an egg course; the Romans crushed the shells in their plates to prevent evil spirits from hiding there. In the Middle Ages, eggs were forbidden during Lent because of their richness; the word mayonnaise was derived from moyeu, the medieval French word for the yolk, meaning center or hub.
Egg scrambled. The dried egg industry developed in the nineteenth century, before the rise of the frozen egg industry. In 1878, a company in St. Louis, Missouri started to transform egg yolk and egg white into a light-brown, meal-like substance by using a drying process; the production of dried eggs expanded during World War II, for use by the United States Armed Forces and its allies. In 1911, the egg carton was invented by Joseph Coyle in Smithers, British Columbia, to solve a dispute about broken eggs between a farmer in Bulkley Valley and the owner of the Aldermere Hotel. Early egg cartons were made of paper. Bird eggs are a common one of the most versatile ingredients used in cooking, they are important in many branches of the modern food industry. The most used bird eggs are those from the chicken and goose eggs. Smaller eggs, such as quail eggs, are used as a gourmet ingredient in Western countries. Eggs are a common everyday food in many parts of Asia, such as China and Thailand, with Asian production providing 59 percent of the world total in 2013.
The largest bird eggs, from ostriches, tend to be used only as special luxury food. Gull eggs are considered a delicacy in England, as well as in some Scandinavian countries in Norway. In some African countries, guineafowl eggs are seen in marketplaces in the spring of each year. Pheasant eggs and emu eggs are edible, but less available, sometimes they are obtainable from farmers, poulterers, or luxury grocery stores. In many countries, wild bird eggs are protected by laws which prohibit the collecting or selling of them, or permit collection only during specific periods of the year. In 2013, world production of chicken eggs was 68.3 million tonnes. The largest four producers were China at 24.8 million of this total, the United States at 5.6 million, India at 3.8 million, Japan at 2.5 million. A typical large egg factory ships a million dozen eggs per week. For the month of January 2019, the United States produced 9.41 billion eggs, with 8.2 billion for table consumption and 1.2 billion for raising chicks.
Americans are projected to each consume 279 eggs in 2019, the highest since 1973, but less than the 405 eggs eaten per person in 1945. During production, eggs are candled to check their quality; the size of its air cell is determined, the examination reveals whether the egg was fertilized and thereby contains an embryo. Depending on local regulations, eggs may be washed before being placed in egg boxes, although washing may shorten their length of freshness; the shape of an egg resembles a prolate spheroid with one end larger than the other and has cylindrical symmetry along the long axis. An egg is surrounded by a hard shell. Thin membranes exist inside the shell; the egg yolk is suspended in the egg white by two spiral bands of tissue called the chalazae. The larger end of the egg contains an air cell that forms when the contents of the egg cool down and contract after it is laid. Lebanon known as the Lebanese Republic, is a country in Western Asia. It is bordered by Syria to the north and east and Israel to the south, while Cyprus is west across the Mediterranean Sea. Lebanon's location at the crossroads of the Mediterranean Basin and the Arabian hinterland facilitated its rich history and shaped a cultural identity of religious and ethnic diversity. At just 10,452 km2, it is the smallest recognized sovereign state on the mainland Asian continent; the earliest evidence of civilization in Lebanon dates back more than seven thousand years, predating recorded history. Lebanon was the home of the Canaanites/Phoenicians and their kingdoms, a maritime culture that flourished for over a thousand years. In 64 BC, the region came under the rule of the Roman Empire, became one of the Empire's leading centers of Christianity. In the Mount Lebanon range a monastic tradition known as the Maronite Church was established; as the Arab Muslims conquered the region, the Maronites held onto their identity.
However, a new religious group, the Druze, established themselves in Mount Lebanon as well, generating a religious divide that has lasted for centuries. During the Crusades, the Maronites re-established contact with the Roman Catholic Church and asserted their communion with Rome; the ties they established with the Latins have influenced the region into the modern era. The region was ruled by the Ottoman Empire from 1516 to 1918. Following the collapse of the empire after World War I, the five provinces that constitute modern Lebanon came under the French Mandate of Lebanon; the French expanded the borders of the Mount Lebanon Governorate, populated by Maronites and Druze, to include more Muslims. Lebanon gained independence in 1943, establishing confessionalism, a unique, Consociationalism-type of political system with a power-sharing mechanism based on religious communities. Bechara El Khoury, President of Lebanon during the independence, Riad El-Solh, first Lebanese prime minister and Emir Majid Arslan II, first Lebanese minister of defence, are considered the founders of the modern Republic of Lebanon and are national heroes for having led the country's independence.
Foreign troops withdrew from Lebanon on 31 December 1946, although the country was subjected to military occupations by Syria that lasted nearly thirty years before being withdrawn in April 2005 as well as the Israeli military in Southern Lebanon for fifteen years. Despite its small size, the country has developed a well-known culture and has been influential in the Arab world, powered by its large diaspora. Before the Lebanese Civil War, the country experienced a period of relative calm and renowned prosperity, driven by tourism, agriculture and banking; because of its financial power and diversity in its heyday, Lebanon was referred to as the "Switzerland of the East" during the 1960s, its capital, attracted so many tourists that it was known as "the Paris of the Middle East". At the end of the war, there were extensive efforts to revive the economy and rebuild national infrastructure. In spite of these troubles, Lebanon has the 7th highest Human Development Index and GDP per capita in the Arab world after the oil-rich economies of the Persian Gulf.
Lebanon has been a member of the United Nations since its founding in 1945 as well as of the Arab League, the Non-Aligned Movement, Organisation of the Islamic Cooperation and the Organisation internationale de la francophonie. The name of Mount Lebanon originates from the Phoenician root lbn meaning "white" from its snow-capped peaks. Occurrences of the name have been found in different Middle Bronze Age texts from the library of Ebla, three of the twelve tablets of the Epic of Gilgamesh; the name is recorded in Ancient Egyptian as Rmnn, where R stood for Canaanite L. The name occurs nearly 70 times in the Hebrew Bible, as לְבָנוֹן. Lebanon as the name of an administrative unit was introduced with the Ottoman reforms of 1861, as the Mount Lebanon Mutasarrifate, continued in the name of the State of Greater Lebanon in 1920, in the name of the sovereign Republic of Lebanon upon its independence in 1943; the borders of contemporary Lebanon are a product of the Treaty of Sèvres of 1920. Its territory was the core of the Bronze Age Phoenician city-states.
As part of the Levant, it was part of numerous succeeding empires throughout ancient history, including the Egyptian, Babylonian, Achaemenid Persian, Hellenistic and Sasanid Persian empires. After the 7th-century Muslim conquest of the Levant, it was part of the Rashidun, Abbasid Seljuk and Fatimid empires; the crusader state of the County of Tripoli, founded by Raymond IV of Toulouse in 1102, encompassed most of present-day Lebanon, falling to the Mamluk Sultanate in 1289 and to the Ottoman Empire in 1517. With the dissolution of the Ottoman Empire, Greater Lebanon fell under French mandate in 1920, gained independence under president Bechara El Khoury in 1943. Kashkaval is a type of yellow cheese made of cow milk, sheep milk, or both. The name is derived from the Italian caciocavallo. In Albania, North Macedonia and Romania, the term is used to refer to all yellow cheeses. In English-language menus in Bulgaria, "кашкавал" is translated as "yellow cheese"; the name kashkaval comes from Latin caseus and caballus. According this theory for the Italian name caciocavallo, the accepted explanation of the word "cavallo" comes from the cheese being traditionally dried by attaching two gourd shaped balls of caciocavallo with a single rope and hanging them to a wooden pole as if placed on a horse's back. Another theory exists; some researchers from the Faculty of Veterinary Medicine in Belgrade claim the Aromanian population, a native Balkan people, created cașcaval. As in Romanian, the word caș means in Aromanian language cheese. No etymology is given for the suffix -kaval in the word kachkaval in the study, nor do the researchers mention the horse, the Latin term caballus or the Italian term cavallo and instead refer to the seasonal movement of the semi nomadic Aromanians and their livestock between fixed summer and winter pastures.
In Bulgaria, kashkaval is made from cow's milk and is known as Kashkaval "Vitosha" while a variation made from ewe's milk is called Kashkaval "Balkan". Kashkaval "Preslav" is the name given to the cheese made from a mixture of both milks. Kashkaval is a traditional food used in most of the breakfast pastry. One of the most common dishes with kashkaval is kashkavalka, a little pastry containing kashkaval inside and on top. Like in the other Balkan countries, it is a major substitute for all other kinds of cheese in pizzas. Another popular Bulgarian snack is Princess, a grilled slice of bread topped with kashkaval or topped with ground pork meat and kashkaval. In Albania, kaçkavall is the most popular type of cheese after djathë i bardhë. It's considered a traditional Albanian cheese, is used as a side dish. A great majority of traditional restaurants will bring plates of raw or fried kaçkavall for no additional cost before the main dishes finish cooking. In Syria and Lebanon, this type of cheese is called qashqawān. It is popular imported or manufactured domestically. In Romania and Moldova, cașcaval is used to refer to a number of types of yellow medium and semi hard cheeses made of sheep's or cow's-milk; the term is used by extension as a generic name for all semi-hard yellow cheeses such as the Swiss Emmental cheese, the Dutch Gouda and the British Cheddar, or anything that looks similar to cașcaval. During the communist regime, because of the food shortages, Romanian housewives developed a technique for a homemade pressed cheese, similar to cașcaval, made out of milk, smântână, butter and eggs. In Romanian cuisine, a lot of dishes are made with cașcaval, like caşcaval pane or mămăligă cu brânză. Kashkaval cheese is popular in Russia. In addition to the Balkan and Italian production of the cheese, there exists a Russian version of the Kashkaval production. In Serbia, kačkavalj is traditionally a sheep milk hard cheese, as such a protected brand of the city of Pirot.
Other cheeses, made from a mix of cow and sheep milk, are sometimes branded as kačkavalj but they cannot be defined as pirotski. Kačkavalj is one of the six traditional cheeses of Serbia; the production process can be seen online, according to a TV show video clip, it was brought to Pirot in the 1810s with the Dalmatian or Italian cheesemakers who settled in then-Ottoman Empire. Rum balls are a truffle-like confectionery cake of cookie butter flavoured with chocolate and rum. They are the size of a golf ball and coated in chocolate sprinkles, desiccated coconut, or cocoa; as their name implies, these cookies contain rum. Because they are not baked, the alcohol flavour and kick are not lost during preparation; this cookie is popular during the holiday season. Rum balls are a popular Christmas treat in England, Canada, New Zealand, the United States, Slovenia and the Czech Republic. In Denmark they are enjoyed year round and known as either romkugle, trøffel or sputnik, depending on the region. There are many different ways to make rum balls, as recipes vary from region to region and family to family. All rum balls must include chocolate and rum, but the rest of the ingredients vary in kind and amount. To make rum balls, the cake material is crushed and mixed with fat, cocoa and a moist binding ingredient, such as jam or condensed milk. Other optional ingredients can be added, such as nuts.

Syria the Syrian Arab Republic, is a country in Western Asia, bordering Lebanon to the southwest, the Mediterranean Sea to the west, Turkey to the north, Iraq to the east, Jordan to the south, Israel to the southwest. A country of fertile plains, high mountains, deserts, Syria is home to diverse ethnic and religious groups, including Syrian Arabs, Armenians, Kurds, Circassians and Turks. Religious groups include Sunnis, Alawites, Isma'ilis, Shiites, Salafis and Jews. Sunni make up the largest religious group in Syria. Syria is a unitary republic consisting of 14 governorates and is the only country that politically espouses Ba'athism, it is a member of one international organization other than the United Nations, the Non-Aligned Movement. In English, the name "Syria" was synonymous with the Levant, while the modern state encompasses the sites of several ancient kingdoms and empires, including the Eblan civilization of the 3rd millennium BC. Aleppo and the capital city Damascus are among the oldest continuously inhabited cities in the world.
In the Islamic era, Damascus was the seat of the Umayyad Caliphate and a provincial capital of the Mamluk Sultanate in Egypt. The modern Syrian state was established in mid-20th century after centuries of Ottoman and a brief period French mandate, represented the largest Arab state to emerge from the Ottoman-ruled Syrian provinces, it gained de-jure independence as a parliamentary republic on 24 October 1945, when Republic of Syria became a founding member of the United Nations, an act which ended the former French Mandate – although French troops did not leave the country until April 1946. The post-independence period was tumultuous, a large number of military coups and coup attempts shook the country in the period 1949–71. In 1958, Syria entered a brief union with Egypt called the United Arab Republic, terminated by the 1961 Syrian coup d'état; the republic was renamed into the Arab Republic of Syria in late 1961 after December 1 constitutional referendum, was unstable until the 1963 Ba'athist coup d'état, since which the Ba'ath Party has maintained its power.
Syria was under Emergency Law from 1963 to 2011 suspending most constitutional protections for citizens. Bashar al-Assad has been president since 2000 and was preceded by his father Hafez al-Assad, in office from 1971 to 2000. Since March 2011, Syria has been embroiled in an armed conflict, with a number of countries in the region and beyond involved militarily or otherwise; as a result, a number of self-proclaimed political entities have emerged on Syrian territory, including the Syrian opposition, Tahrir al-Sham and Islamic State of Iraq and the Levant. Syria is ranked last on the Global Peace Index, making it the most violent country in the world due to the war, although life continues for most of its citizens as of December 2017; the war caused more than 470,000 deaths, 7.6 million internally displaced people and over 5 million refugees, making population assessment difficult in recent years. Several sources indicate that the name Syria is derived from the 8th century BC Luwian term "Sura/i", the derivative ancient Greek name: Σύριοι, Sýrioi, or Σύροι, Sýroi, both of which derived from Aššūrāyu in northern Mesopotamia.
However, from the Seleucid Empire, this term was applied to The Levant, from this point the Greeks applied the term without distinction between the Assyrians of Mesopotamia and Arameans of the Levant. Mainstream modern academic opinion favours the argument that the Greek word is related to the cognate Ἀσσυρία, Assyria derived from the Akkadian Aššur; the Greek name appears to correspond to Phoenician ʾšr "Assur", ʾšrym "Assyrians", recorded in the 8th century BC Çineköy inscription. The area designated by the word has changed over time. Classically, Syria lies at the eastern end of the Mediterranean, between Arabia to the south and Asia Minor to the north, stretching inland to include parts of Iraq, having an uncertain border to the northeast that Pliny the Elder describes as including, from west to east, Commagene and Adiabene. By Pliny's time, this larger Syria had been divided into a number of provinces under the Roman Empire: Judaea renamed Palaestina in AD 135 in the extreme southwest.
Since 10,000 BC, Syria was one of the centers of Neolithic culture where agriculture and cattle breeding appeared for the first time in the world. The following Neolithic period is represented by rectangular houses of Mureybet culture. At the time of the pre-pottery Neolithic, people used vessels made of stone and burnt lime. Finds of obsidian tools from Anatolia are evidences of early trade relations. Cities of Hamoukar and Emar played an important role during Bronze Age. Turkey the Republic of Turkey, is a transcontinental country located in Western Asia, with a smaller portion on the Balkan Peninsula in Southeast Europe. East Thrace, located in Europe, is separated from Anatolia by the Sea of Marmara, the Bosphorous strait and the Dardanelles. Turkey is bordered by Bulgaria to its northwest. Istanbul is the largest city. 70 to 80 per cent of the country's citizens identify as Turkish. Kurds are the largest minority. At various points in its history, the region has been inhabited by diverse civilizations including the Assyrians, Thracians, Phrygians and Armenians. Hellenization continued into the Byzantine era; the Seljuk Turks began migrating into the area in the 11th century, their victory over the Byzantines at the Battle of Manzikert in 1071 symbolizes the start and foundation of Turkey. The Seljuk Sultanate of Rûm ruled Anatolia until the Mongol invasion in 1243, when it disintegrated into small Turkish principalities. Beginning in the late 13th-century, the Ottomans started uniting these Turkish principalities.
After Mehmed II conquered Constantinople in 1453, Ottoman expansion continued under Selim I. During the reign of Suleiman the Magnificent the Ottoman Empire encompassed much of Southeast Europe, West Asia and North Africa and became a world power. In the following centuries the state entered a period of decline with a gradual loss of territories and wars. In an effort to consolidate the weakening social and political foundations of the empire, Mahmut II started a period of modernisation in the early 19th century, bringing reforms in all areas of the state including the military and bureaucracy along with the emancipation of all citizens. In 1913, a coup d'état put the country under the control of the Three Pashas. During World War I, the Ottoman government committed genocides against its Armenian and Pontic Greek subjects. Following the war, the conglomeration of territories and peoples that comprised the Ottoman Empire was partitioned into several new states; the Turkish War of Independence, initiated by Mustafa Kemal Atatürk and his colleagues against occupying Allied Powers, resulted in the abolition of monarchy in 1922 and the establishment of the Republic of Turkey in 1923, with Atatürk as its first president.
Atatürk enacted numerous reforms, many of which incorporated various aspects of Western thought and customs into the new form of Turkish government. The Kurdish–Turkish conflict, an armed conflict between the Republic of Turkey and Kurdish insurgents, has been active since 1984 in the southeast of the country. Various Kurdish groups demand separation from Turkey to create an independent Kurdistan or to have autonomy and greater political and cultural rights for Kurds in Turkey. Turkey is a charter member of the UN, an early member of NATO, the IMF and the World Bank, a founding member of the OECD, OSCE, BSEC, OIC and G-20. After becoming one of the first members of the Council of Europe in 1949, Turkey became an associate member of the EEC in 1963, joined the EU Customs Union in 1995 and started accession negotiations with the European Union in 2005 which have been stopped by the EU in 2017 due to "Turkey's path toward autocratic rule". Turkey's economy and diplomatic initiatives led to its recognition as a regional power while its location has given it geopolitical and strategic importance throughout history.
Turkey is a secular, unitary parliamentary republic which adopted a presidential system with a referendum in 2017. Many of these peoples spoke the Anatolian languages, a branch of the larger Indo-European language family.
