The coat of arms of the state of New Jersey includes:A shield with three plows, representative of New Jersey's agricultural tradition.
A forward-facing helmet.
A horse's head as the crest of the helmet.
The female figures Liberty and Ceres, representative of the state's motto. Liberty is holding a staff supporting a stylized Phrygian cap; Ceres is holding an overflowing cornucopia.
The streamer at the foot of the emblem contains the State Motto of New Jersey, "Liberty and Prosperity", and the year of statehood, 1776.

Pierre Eugene du Simitiere
Pierre Eugene du Simitiere was a Genevan American member of the American Philosophical Society, naturalist, American patriot, and portrait painter.
Raising the Liberty Pole in New York City, 1770 pen and ink drawing by Simitiere depicting one of six liberty poles to be alternately raised and later removed over ten years in confrontations among the Sons of Liberty and British troops stationed in the city prior to the American Revolutionary War.
